Saltbush

Old Man Saltbush is a sprawling grey/blue shrub found in large areas of dry inland Australia. The leaves contain calcium, protein, magnesium and a range of mineral salts that produce the naturally salty flavour.

Indigenous Australians traditionally collected the minute saltbush seeds from flower heads after rain to grind and roast for damper.

Dried saltbush leaves can be added to bread, grills, pasta, stews, soups for a naturally salty, herby flavour.
